The Chamber has recently been providing assistance with site locations to the team behind a very exciting new Southern Highlands development.
The Farm will be a beautiful three hat fine dining restaurant, organic commercial garden and hotel, run by Martin Benn and Vicki Wild – one of Australia’s most awarded restaurant teams.
The mission of The Farm is a charitable one, run by not for profit charity Table. All farm profits will be directed to programs that support education and training, the environment and health and well-being.
Based on the combination of three enterprises Blue Hill at Stone Barns in New York, Mondo X in Tuscany and San Patrignano in Emilia Romagna. The Farm aims to simply reconnect people through food and will use every opportunity the farm offers to train, employ and reconnect youth at risk from the regional area.
Similar to Brae in Victoria this project will be a game changer for destination dining in the highlands and a great contributor to the local social and environmental community.
